Fish tacos and margarita's
Last night the hubs wanted fish tacos. I googled Mahimahi and came across this recipe in Self magazine. Add a side of black beans and a fresh lime margarita and you have dinner. A few weekends ago the hubs did a Cointreau margarita taste test and I prefer with as opposed to without. I like a sweeter drink and it is more my liking. Heck, I use American Honey when I make a mint julep. Along with a generous amount of simple syrup. I guess something has to keep me sweet. Happy Earth Day to you and yours!

Summer tease

Lemon Chess Pie
I have already made this pie twice in the past two weeks. It is the perfect balance between sweet and tart.
Ingredients
1 Prepared pastry for a 9-inch pie plate or a regular frozen pie crust
6 T butter (melted )
1 2⁄3 cups sugar
4 Eggs
2 T cornmeal
2 T grated lemon zest
1⁄4 c lemon juice
1 t vanilla
Instructions
Preheat
oven to 450ºF. Unfold pie pastry and gently ease into pie plate.
Flute pastry around edge of pie plate. In a large bowl beat together
butter, sugar and eggs until smooth. Add cornmeal, lemon peel, lemon
juice and vanilla. Beat until thoroughly blended. Pour into pie shell,
and bake in a preheated 450ºF oven for 10 minutes. Reduce heat to
350ºF, and continue baking until knife inserted in center comes out
clean or about 30-40 minutes. Cool on wire rack at room temperature for
no more than two hours. Serve at room temperature or chilled.
Hint: The butter tends to make the crust stick to the pan. II placed a round piece of parchment paper under the crust to avoid this. I also dusted it with powdered sugar the first go around.

Quest for a bar cart
Our neighbors had us over for drinks around the fire pit last night. Their picnic table was shabby chic with a lovely tray for the bar, glasses, lanterns and snacks. It made me realize that we need a bar cart for our porch. The search is on!

Spring sale
The other day I went with the hubs to pick up a special order, that in turn caused us to go to a nearby outlet mall. We have not shopped there in years and I wanted to see what stores they had and their spring offerings. I was not feeling the shopping bug until I went into the Banana Republic Factory Store. There was a sale going on and I got the dress below for under $17 and a cute top to boot.
The hubs was sitting waiting for me while I browsed and told me he liked the dress that was displayed on the front of the store and told me I should buy it. I handed him my bag, told him nope and that I was moving on to the next store. He told me he would catch up with me and a few minutes later he did. I also bought

from J. Crew Factory. The manager of the store gave me a 50% off coupon. SCORE!
When we got home the hubs said he wanted a fashion show. I opened my bag from Banana and found he secretly bought me not only the dress, but the linen blazer as well. He is a keeper!
Now I have to get a green bag since I already have nude pumps.
